Lamb

Roasts

Slow oven roasting for a tender and juicy roast is most ideal. Aiming for an internal temperature of 63 degrees for medium rare - medium. ideal oven temperature would be 180 degrees and cook until you have reached your desired internal temperature.

Chops & Racks

Chops are best cooked on high heat by grilling or pan searing and also being seasoned. Lamb racks are also recomended to be pan seared and also can be cooked on high heat such as 180-200 degrees in an oven on grill.

Shanks 

Lamb shanks are best cooked either braised or slow cooked in a rich gravy or sauce.
